At Bodegas Heredad de Aduna we follow two winemaking methods. By means of carbonic maceration, traditional in the area, we obtain a young wine with its own well-defined characteristics. These are fresh and fruity wines that require grapes of the highest quality. For the Crianza and Reserva wines we reserve the destemming method, which transfers to our wines all the intensity of our oldest grapes. In this way, and with extreme monitoring at each step, we ensure an adequate behavior in the barrel and in the subsequent refining in the bottle, both processes where time passes as slowly as necessary.
