After so many years of producing oil in the family, when in 1991 we were told that we could no longer continue making our oil in the old town of Jumilla, where our old stone olive oil mill was located, we started thinking about setting up the mill in the countryside next to the olive groves. We had some fundamental principles in mind. First, we wanted to produce top-quality oil by milling the harvested olives on the same day. Second, we aimed to make organic products. Lastly, we wanted to make the most of the olives, trying not to leave any waste and embracing what is now called the circular economy. We planned to have a modern mill designed to add value to our olive production.
